This Smoked Guinness Shepherd's Pie is packed with bold, rich flavors, smoky goodness, and a creamy mashed potato topping that will have you coming back for seconds. Ingredients
3 chuck roasts
6 tbsp olive oil
2 tbsp garlic powder
2 tbsp black pepper
2 tbsp Kosher salt
2 stalks celery (diced)
Salt and pepper to taste
2 tbsp garlic (minced)
2 large carrots (diced)
1 yellow onion (diced)
4 tbsp tomato paste
3 sprigs rosemary
1 spring thyme
2 cups Guinness
4 cups beef stock
For Mashed Potatoes:
3 lbs. golden potatoes
4 tbsp salted butter (cubed)
¼ cup white cheddar cheese (finely grated)
1 egg yolk
¼ cup white cheddar cheese (separate to garnish at the end)
¼ cup chopped chives

Instructions
Let’s start with the flavor. Coat your chuck roasts with your olive oil and then generously season each side with your garlic powder, salt, and pepper.
Time to sear. Heat up your Dutch oven over medium-high heat and sear your chuck roasts on every side until they’ve got a deep, golden crust. Once they’re browned, take them out—but don’t clean the pan! That’s where the flavor lives.
Toss in your onions and cook them until they’re soft and translucent. Then, add your celery, carrots, and garlic, stirring occasionally until the carrots start to soften and their color pops. Use a wooden spoon to scrape up all those delicious browned bits from the bottom of the pan. Now, mix in the tomato paste, rosemary, and thyme, making sure everything gets nicely coated.
Preheat your smoker to 350°F (176°C). Time to bring in that smoky magic!
Insert your MEATER Pro probe into the thickest part of one of the chuck roasts. Open the MEATER app and set the internal temp to 203°F (95°C)—aka “Fall Apart” perfection.
Add the chuck roasts back into the pot with your veggies, pour in your beef stock and Guinness, cover it up, and place the Dutch oven in the smoker.
Meanwhile, peel and boil your potatoes until they’re fork-tender, then mash them up in a bowl with butter, milk, white cheddar, salt, pepper, and an egg yolk. Stir it all together until it’s smooth.
Once the MEATER app lets you know the chuck roast is ready, take the Dutch oven out of the smoker and shred the chuck roast into thick, juicy strips. Stir everything together—the sauce will be thick, rich, and irresistible!
Spread your mashed potatoes over the beef mixture, sprinkle some extra cheddar on top, and pop it back in the smoker (lid off) for about 10 minutes—just enough time to let that cheese melt into golden, bubbly perfection.
